WINE: Pasqua Valpolicella Superiore, Denominazione di Origine Controllata ~ from Dai Vigneti Monte Vegro, Illasi’s Pasqua Wines. By the way, I looked up “Mai Dire Mai.” It means “Never say Never.” Well, that’s mind opening and so is this wine.

Pasqua’s Valpolicella Superiore
In more ways than one this is a mouthful to say, I know, but it matched in full flavored lusciousness as we enjoyed it. Get out your best pasta dishes for this Italian delight. I did, it was a really cheesy lasagna. I like to do a yin yang with food and wine. The bigger the flavors, the silkier a wine must be for my best pairings. I have to pay attention to my own palate, while trying to get it all in balance.
My lasagna was in a beef sauce and a heaping amount of mozzarella cheese. Other foods I’d consider would be roasted meats, like beef or pork, especially if they’re caramelized or barbecued. There are also savory mushroom dishes, like garlicky portobello mushrooms, for vegetarians and vegans. And, on a cold winter’s day, rich stews or soups made with beef stock, tomato paste, and dried spices are yummy. Going cheesy with aged cheeses, like cheddar or blue cheese, paired with fruit compotes. Fried foods are also a great pairing. There are a lot of options for this wine, because it’s so savory.

Not My First Rodeo With Pasqua’s Wines
A delightful wine is always delicious, the Famiglia Pasqau Valpolicella Superiore 2020 ~ Italy, is in this compilation, here. And, this one: Romeo and Juliet Prosecco, the Angst and the Sparkle, in The World of Wine ~ Italy
Pasqua Wines is an old friend for my palate, as a result trust has already been built into it. This is a bit about this winemaking family that’s been producing wines for a century now, since 1925. They state, they’re “Deeply rooted in the territory, strongly projected into the future. The continual search for quality, innovation and strong connection to the terroir have allowed our almost hundred-year-old winery create projects with extraordinary personality, absolutely tailor-made.” Sometime this year, I’m betting there will be a century celebration.

How to Celebrate 100 years of food and Wine.
The Winery’s family: “Today, alongside President Umberto, his sons Riccardo, Chief Executive Officer, and Alessandro, President of the Pasqua USA division, lead the business. In the last five years, Pasqua Vigneti e Cantine has distinguished itself for numerous patronage activities involving artists from different backgrounds and training.”
And, the family’ ambition: “The company’s ambition is to take the winemaking experience it has gained over 100 years of history into the future with renewed stylistic codes. This is possible by combining our century of experience and deep understanding of the potential of the Valpolicella terroir with innovation in winemaking style.”

All I know is, when their wines arrive, regardless of brand of variety, I just want to return to Italy, and become absorbed again in beauty, friendly people, explore more Italian dishes, all pair with their voluptuous wines. Bravo being on my Top Ten list.

Verona, how beautiful you are!
